16 Months on White Sand

Sisay Coffee

What happens when you serve one recipe to thousands of travelers from every continent? Notes from our Boracay pop-up.

A Pop-Up on Paradise

Boracay isn't just a beach. It's a crossroads. Every year, millions of travelers from every continent wash up on its white sand — looking for sun, for sea, for something they can't name.

We gave them coffee.

Not just any coffee. The world's first spicy coffee — Selim spice blended into premium Arabica, served steps from the tide line.

One Recipe, Thousands of Palates

For 16 months, we served the same recipe to backpackers from Berlin, surfers from Sydney, digital nomads from Toronto, honeymooners from Seoul. Each one brought a different palate, a different reference point, a different idea of what coffee should be.

And almost every single one came back.

That's the thing about Selim spice. It doesn't challenge you — it welcomes you. The warmth is immediate. The sweetness lingers. It doesn't matter where you're from. The spice speaks a language everyone understands.

What We Learned

Those 16 months taught us everything:

  • Consistency is sacred. When a traveler walks 20 minutes down a beach for your coffee, you better taste the same as yesterday.
  • Stories sell themselves. We never marketed. People just told each other.
  • The beach is in the cup. You can take the coffee off the beach, but you can't take the beach out of the coffee.

The Last Sunset

We knew we couldn't stay forever. Boracay was the proving ground — the place where a wild idea became a real product, tested against every palate on earth.

But the beach will always be in our coffee. And now, we're bringing it to the world.
